Product Description
Combining the features of a chef's knife and a cleaver, the Santoku is an all-purpose knife that's ideal for cutting meat, fish, and vegetables. The word "santoku" means three good things--a reference to the three cutting tasks it performs so well: slicing, dicing, and mincing. The kullens along the edge of the blade help to reduce friction, which prevents food from sticking. For proper balance, this 6-1/2-inch Santoku knife also features a sharp, stainless-steel full-tang blade that is stain-proof and hardened for strength. Oxo regularly wins design awards for its Good Grips utensils, which have black ergonomically correct rubber handles that are comfortable to use. I've been using this knife for over 6 months now. I don't have any gripes about how the knife feels in my fairly large hand but I'm a little disappointed in its performance. One of the selling points of a santoku knife is that food is not supposed to stick to the blade while slicing. Unfortunately, that has not been my experience using this knife. I don't know if the scallops need to be shaped differently (longer? wider? deeper?) or if I'm just expecting too much from the knife. I do have to say food releases a bit more easily than with my western-style chef's knife. The blade was quite sharp when it arrived and has been easy to maintain with a steel. In spite of my disappointment with the food release, I usually reach for the santoku over the chef's knife since that one is badly in need of professional sharpening. All-in-all, I'm not sorry I bought the knife but I'm not as thrilled as I expected to be.

This was the first santoku that I have ever used, and it has been a wonderful experience thus far. The grip is nice and wide, fitting my fairly large hands easily. The heft of the knife leaves a bit to be desired, though this may be alleviated if I had purchased a longer blade. The metal itself feels sturdy in my fingertips and is slightly flexible on the x-axis, though only with a fair amount of pressure applied. The blade itself is well honed and cut through meats with ease. The spine of the knife has a bit of a bite on either edge, but you are able to apply pressure with your palm without hurting yourself. The blade won't generate enough force to cut through anything terribly thick in a single stroke, but with constant and firm pressure, even the toughest meats will be cleft in twain. I can't give a 5, as this does feel like a beginner's knife (and rightfully so), though for the price it is a must have. Oxo has satisfied me once again.

I purchased this for my wife as a Christmas gift and she absolutely loves it. She loves to cook and this is her "go to knife" when she is in the kitchen. She loves the balance and the comfortable handle. The length is perfect for most kitchen tasks.

I'm not a knife snob. I don't have any expensive (>$100 ... for a set) knives. But I do know what it feels like to work with sharp knives, and this is not one of them. First use, right out of the package on fresh celery - felt like I was trying to cut stone. After applying intense pressure with a sweeping motion, it would finally break through and whack the cutting board with a snap. Imagine cutting celery with a butter knife and you have the idea.

I like the weight, feel, and handle. The only thing missing is the ability to cut food. If I could find the package, I'd return it.

I have to assume it's a manufacturing defect (i.e., skipping the sharpening phase), because Oxo products are usually very good to excellent, always with fabulous ergonomics. (Just went through 5 lbs of carrots with an old Oxo peeler and it was a remarkably painless exercise.) Perhaps this experience is an outlier, but be prepared for the possibility of great disappointment with the performance of this knife.

Bought this knife because I was looking for a larger Santoku to chop through larger, harder vegetables. I have four of the small ones I use daily for most of my chopping. But, I needed a larger one and the large chef's knife I have is slightly awkward as I have small hands. This is a perfect size for a larger utility knife and it is a great price for the knife. I was looking for something to use everyday without spending a fortune on a knife and this one works well for what I use it for. Good value for the price.
