Product Description A blade of many talents, Santoku literally means "three good things", referring to its masterful handling of slicing, dicing and mincing. Ultra-tough VG-1 Japanese steel is elegantly clad with an impressive 33 layers, providing ultimate sharpness and edge retention. Lifetime warranty.
Amazon.com Review Calphalon's Katana Santoku knife promises superior workmanship and practical versatility with just its name--"katana" refers to the sword carried by Japan's Samurai warriors, and "santoku" translates to "three good things." An ideal slicer, dicer, and mincer, this carefully crafted knife lives up to its noble moniker. The 7-inch Damascus-style blade is fashioned from 33 layers of VG Japanese stainless steel and shares qualities of both a cleaver and a knife. Whether it's cutting meat, fish, or vegetables, the surface remains exceptionally strong, resists rust and corrosion, and maintains its sharp cutting edge. Oval notches along the blade reduce friction so the knife moves through food freely. Adding security and style, the knife features an integrated bolster design, and the durable poly-resin handle sits in the hand comfortably. The tool measures approximately 11 inches long and comes with a lifetime warranty. For best results, Calphalon recommends washing it by hand and drying promptly. --Kara Karll

Good for about a year February 16, 2009 Stuart Johnston (Dallas, TX) 1 out of 1 found this review helpful
I really like the balance and the handle of this knife. However, after about a year, I noticed that the blade is cracking in a few spots. I always hand wash and I don't even cook that often. Also, despite the "Japanese steel" the knife is made in China.
returnung purchase November 3, 2008 Kenneth W. Padgham (Tucson, AZ) 1 out of 1 found this review helpful
Knife needed to be returned to manufactor because of defect. All went well after three week delay.
I'm buying it again! March 28, 2008 L. Morgan (USA) 2 out of 2 found this review helpful
My husband received this knife as a birthday gift 6 months ago and I've used it daily since ever since. The handle has nice smooth contours that don't hurt my hand. It's well balanced and stays sharp. Now we're getting a divorce and he kept the knife. I miss using it so much that I'm going to go to the Calphalon store tonight to get myself one! It's the perfect knife: beautiful and functional.
Bad Handle November 27, 2007 Joel A. Loeffler (Austin, TX United States) 4 out of 4 found this review helpful
I have two of these knives. They are the best knives I have, and I have a lot of knives. The problem is the handle. I have had to send them back three times for cracking of the top handle. They have never seen the inside of a dishwasher, so heat is not the problem. I would still buy them again. They are that good.
Update: I have had to send the knife back for the sixth time for the cracking of the top handle in exactly the same place every time. I think this is a materials problem. I have other knives that are 30 years old and still have good handles. What's wrong, Calphalon?
My favorite knife -- the one I'm reaching for before I even know what I'm cutting November 20, 2007 G. Legowski (Pittsburgh, PA USA) 3 out of 3 found this review helpful
I personally find the handle very comfortable on this knife. As with ANY knife, go to a good store and ask to demo it before buying -- some people love the grip, some people hate it.
I find the weight and balance on this knife just right for my grip, and it holds its edge very well. I'd buy it again in an instant.
