Calphalon Dual Edge Cheese Plane July 31, 2010 Gerald Williams (Central Tx, USA) Good sturdy cheese plane; fits my hand very well and does a very good job. Works much better for the harder cheeses then a wire cutter. It is best to cut the cheese while it is still cold and firm and let to come to room temperature after it is cut. A cheese plane is not for soft cheeses.
Good quality but... July 30, 2010 Hans H. Wallin (Philadelphia, PA) It cuts too thick slices, for my taste anyway. This is a European style cutter, or plane/slicer. I have had many cutters like this, they all cut thinner slices, which I prefer. Other than that it is a good cutter, good quality and sharp edges.

I love my new cheese slicer. Have wanted (and needed) one for years, so I finally did it. Liked the name, "Calphalon" because I've been using a set of their pots and pans for close to twenty years now and they are my 'old reliables.' It is made with the same high quality, has a nice comfortable (almost a soft) handle, and metal part is of good thickness and very sturdy, no flexing. I got a kick out of the label "Cheese Plane." Like a carpenter would use. Cuts cheese 'just like the designer intended.' It behaved perfectly even when I did the last slice from a piece of soft cheese (Havarti)that was becoming vanishingly small. Had to be careful not to slice a bit of my finger. That's how thin the piece of cheese was getting. Anyway, I was careful, and not a bit of cheese was wasted. Slicer also has a sharpened edge at the far end. It is perfect for cutting chunks as compared to slices. It does nice thick, straight, cuts with that second blade, and I only have the one tool to clean. I want to try it on other items, but can't think of anything with the texture of a nice rich, soft cheese. Any suggestions?

The best freakin cutter ever. Well worth price if you get the free shipping! And if you don't want to slice the cheese perfectly then you can cut flawless slices. It is the exact size of the cheese block as well which makes it easier so as not to rotate the cheese every slice to keep it from having a diagonal edge or breaking!
A wonderful cheese plane June 10, 2010 asiana (Chicago) This Calphalon cheese plane works really well on hard and soft cheese. It was a replacement for a cheese plane that had an adjustable blade (which adjusted, but never really cut well). It's fairly easy to clean, fits my hand nicely, and I would definitely recommend.
