Heavy and well balanced August 29, 2010 Evan Eberhardt I have had this set of knives for 3 years now and they have performed quite well. I was cutting up many big watermelons this past summer with the chef's nice and it performed like a champ. I bought these Caphalons for the way they felt and plus they have a nice look in the kitchen (each knife is also labeled at the base, which is handy). I like heavier knives and these are indeed that. The blades are thick and very sturdy. They do need to be sharpened somewhat regularly though, perhaps every tenth use, but that is the nature of knives (if it seems that you are using too much force to be cutting food, then the blade probably needs sharpening). I have no doubt these will last many more years. I also never put them in the dishwasher and have had no issues with rusting. You are not supposed to put any cutlery in the dishwasher from what I know (they all tend to rust). It is overkill anyway as hand washing only takes a few seconds. Calphalon did a nice job on this set.

Received the set as a present, probably a good idea to wash anything from the store before use... I did, and now the handles are ruined. Hopefully I can return them and exchange for same or similar set. DO NOT WASH IN DASHWASHER, as another review said, hot dry and hard water are an awful combo. There is no warning of this on the box, and no warning of the fight you'll have with your wife after you're thoughtfulness and consideration to wash the knives turns to a nightmare...
The knifes feel great for balance, handle weight = blade weight so they handle freely. We'll probably return them and repurchase the same set, so that says a lot. Steak knifes look like they'll be a pain to clean and will probably shred your sponge. Sorry this is so scatter brained, that's me, enjoy the knives!

Hi, At first this set seemed better than competition.
Unfortunately I was first disappointed to note that not the entire set was made of "German Steel", the steaks knife are made of "Asian Steel".
Second disappointment, after 1 week, both a steak knife and the bone parer knife showed a stain of rust.
So I returned this and will try to find something like the old knifes I have for over 30 years and never showed a rust stain. I will try to stay away from "Made in China German Steel". Need to read the fine print.

It seems like we have bought new knives every few years for one reason or another, but two years ago, I decided I was going to buy a nice set for my wife for Christmas. I wanted the "lifetime purchase" this time. We don't do a lot of cooking, the knives are mostly for the steaks and bread. At the store, I really liked these knives... they are simple yet a touch of elegance. They have a very nice heft to them, and they are balanced very well, and they fit the hand well. The scissors get used for all kinds of things, and they are nice; the bread knive is good. The larger butcher style knives are simply dull, and feel more dangerous than confidence inspiring. But all that is fine for us... its just the steak knives that really give me pause, but that is by far what we use the most. The problem is that the serrated design is very fine, and from the very first cut, the teeth "load up". By this I mean that the steak ends up filling all the gaps in the serrations and when the knife comes out you can barely tell it is a serrated knife anymore. You can keep cutting, and they will work, but the effort goes up and the mess of meat that is stuck to the knife after every cut is frustrating. There's nothing you can really do about it, just keep cutting and put it in the dishwasher, or use a napkin to carefully pull the remnants out. I've never had a knife do this before... I've had duller knives for sure, but its almost like I'd rather have a clean knife that is less sharp than a sharp one that loads up and acts dull.
Semi-related, I bought the full Calphalon pots and pans set at the same time for all the same in-store feelings. Now, after a couple of years use, the frying pans have been passed to the trash can... the non-stick coating just started peeling / flaking off, and the thought of that in the food is horrible (read up on it... not good to eat teflon). Its like they got so close on both products, but has left me assured I won't buy either again.
