There are a lot of quality knives available so choice comes down to user preference. The important things I look for in addition to quality: Does the knife feel balanced in my hand and is the grip comfortable. This knife is both balanced and the grip feels secure. I'm a woman with relatively small hands so this knife is perfect for me.

I am a big fan of Calphalon (pans and knives). My most used knife is the Calphalon 6" utility. I like the composite handle grip. It feels warm to the touch not cold like stainless or the heavily coated wood grips. Even when wet, it does not get that slippery feeling that metal or shiny surfaces do. I have Wusthof knives that are never used because the handles are made for a man's hand and feel very awkward to me.

I had an opportunity to use the knife recently on a variety of foods. It cut through cantaloupe (rind and all) very easily then cut my homegrown tomatoes into thin slices for BLT's. I used it to chop onions, peppers and some herbs for pasta sauce and was very pleased with the way it handled.

A note of caution: When removing the knife from the package, I was careless and cut my thumb almost to the bone. Big ouch!!! Be careful.

The second part of my review deals not with this knife but with Amazon's service. The package this knife was mailed in was large enough to hold a combination radio/tape deck/speakers. The box was huge and the little knife was wedged in with plastic air pillows. This box would not fit into my standard sized mailbox so I got a note from the postal carrier telling me I had to come to the post office to pick up the box. A ten mile trip each way, twenty miles total because Amazon has a one-box-fits-all policy. I am not happy with Amazon.com. What were they thinking!

We have used this knife regularly since we bought it about 9 months ago. It handles wells and is comfortable to use. The blade maintained it's sharpness every time we honed the knife. We took good care of the knife as we had hoped to keep it for a long time, Stored it properly, cleaned it after every use, never dropped it before, etc. In general, we really enjoyed using this knife while we had it

However, just yesterday, while we were doing the dishes, the knife was accidentally knocked off the counter. Our initial fear was that we ruined the tip. When we picked it up, the knife was split in half between the blade and the handle. We were incredibly surprised because the knife was made with one continuous piece of metal from the blade and through the handle. Apparently the metal at the tip of the handle had rusted through (even though we dried the knife before storing it). We wonder how long the knife would have lasted even if we hadn't dropped it.

And because the knife broke after being dropped, we don't think the lifetime warranty will cover it. We may try to submit it just because of the rust and see what happens.

I have a full set of Calphalon knives and love them. One of the best added features is the type of knife is etched on the butt of the handle and it makes it easy to grab just the right one. But besides that convenience, these are solid knives made from German steel that have held an edge for years--use them constantly. The 7 inch Santoku was for my wife who makes many of the daily meals and while she loved the smooth action and balance of the knife, the length was too unwieldy for her smaller hand. We wound up exchanging it for the Calphalon 5 inch Santoku and it's a great fit for her.

This knife feels very sturdy and balanced when I use it. I'm not sure how it compares to more expensive steel, but it does a great job. I bought this one as a gift after having an identical model for at least 3 years. Great, fast shipping.

I got this as a gift in December for my wife and I think I use it more often than she does. Great for cutting fine items and stays relatively sharp, though I am someone who is constantly sharpening my blades regardless. I would buy this again for myself or as a gift and am thinking of trying the 5" version of it as well.
