I do have this system (a Christmas gift), but until the night before last I haven't had the opportunity to try it out as Vesta and I seem to finish every bottle of wine we start. But we were in the middle of a Coastal Estates BV Cab and Eight Legged Freaks, a movie with a very young Scarlett Johansson in it that we watch a lot, because it's so campy, when friends stopped by with a couple bottles of very expensive Bordeaux. They wanted to share, so I stopped the BV, pumped the air out and guess what, the next night it was just fine, every bit as good as when we first opened it. So five stars from me. This works.

The VacuVin works great for me, keeping wines drinkable for several days. For those doubtful of the whole idea, I would say that hand vacuum pumps are a standard technology (you can find them in auto shops, sold on Amazon) and they remove about three quarters of the air (and hence oxygen) from the bottle. A company called Roarockit sells a pressure laminating kit with a wine vacuum pump as the key piece!
From their FAQ: "The wine pump that comes with a Roarockit is an amazing high pressure low volume pump. It will create as much vacuum pressure as an electric pump will, between 11 and 13 lbs psi." Yes, you can do better vacuum for a lot more money, but it won't help the wine much unless there's little left (and a lot of air)

I don't finish a typical bottle of red wine for about a week, so anything I can do to keep it fresh seems sensible. Basic chemistry tells me that a vacuum will help with that, although I'm not convinced that this creates enough of a vacuum to make much difference. Keeping wine in the fridge is much more effective (if you don't mind cold red wine), so I do both, and am pretty happy with that. Also, it's a lot easier than trying to replace certain types of corks.
